Smoke That Turkey

Well my friends it has been a long time since I posted, but since it is Turkey Day in a few I figured I would put up my plans for the big day. I am going to be smoking a turkey for the first time. (I’ve even bought turkey lunch meat just in case I screw this up!) I will be brining the turkey (A.K.A. Wilbur) for 24 hours prior to putting it in the smoker. 

My brine consists of water, apple cider vinegar, brown sugar, rosemary, and orange slices. After the brine I will be injecting Wilbur with a mixture of butter and spices. Then I will slather on a nice dry rub which I have yet to concoct as of this time. I’ve got to do a little research before I come up with my recipe.

Then it is on to the smoker using Apple wood chips. Good ole Wilbur will smoke low and slow for approximately 7-8 hours. As for the sides I am making Homemade Au Gratin Potatoes which is a secret family recipe. I will be making my own gravy with a brown sugar and worcestershire sauce base. (Have no fear there will be some other spices in there to kick it up a notch.)

Making some deviled eggs as well kicked up a bit with some jalapenos in them. I will post pictures of my turkey as I begin the entire process of smoking it.
